- 味わいの特徴
- The process of making sake involves polishing the rice. Our standard junmai sake is 60% polished rice (40% rice bran), Daiginjo is made with 40% polished rice (60% is bran). Generally, the more polished the rice is, the more beautiful the flavor will be, However, at our brewery, we dare to brew sake using rice that is not polished as much. By reducing the amount of rice polishing, the original flavor of the rice as a grain can be more fully appreciated. This "Low-polished Junmai 80% Polished Rice Hi-ire" has a deep flavor that only low-polishing can provide, We recommend pairing it with rich dishes and dishes with strong flavors. The rice used for this sake, called "Tamakae," is one of the main varieties of sake rice in Shiga Prefecture, It is a hard rice with a unique character. It is suitable for long-term aging, as it develops a full flavor profile as it ages. It has a robust flavor, but the acidity gives it a crispness, It is a sake that makes you want to drink sake after sake sake with your meal. Compared to the "Low-polished Junmai 80% Polished Nama-nazake," this sake has a more subdued and deep flavor. It is best served at room temperature or warmed up to a higher temperature to enhance its flavor.
