- Using Yamada Nishiki rice grown in Nabari City, where our brewery stands. Nabari is now our flagship. The name "Nabari" originates from "newly cultivated land." Its elegant, fruity aroma, rich umami, and subtle astringency create perfect balance, making it an exceptional pairing for cuisine. Selected for five consecutive years for international first-class flights. The farmer cultivating this Nabari rice, Mr. Takanami, is the chairman of the Nabari Yamada Nishiki Producers Association. The rice fields in the Mihata district of Nabari City have clay soil. Because this area was once the lake bed of Lake Biwa, the soil holds nutrients well, enabling the harvest of high-quality Yamada Nishiki rice every year. This product is a limited edition sake for CSW2026.
