Kokuryu Sake Brewing|Fukui
- 味わいの特徴
- The fragrance of plum blossoms carried by the early spring breeze. In the back, one can find a strong exotic aroma like that of chinko blossoms. Furthermore, cinnamon is added to the pear dipped in acacia honey, leaving a lingering aroma reminiscent of the white kernel of a plum seed when it is crushed and the sea breeze. There are layers and layers of delicately perceptible aromas. The high texture and core strength create a framework, but the fluffy, cotton-like body also adds to the image of a warm personality.

Japanese Cuisine,French Cuisine,Italian Cuisine
- Sashimi of white fish and steamed scallion with sake.
- I like to serve the white asparagus with hollandaise sauce (butter and lemon juice emulsified with egg yolks and seasoned with salt, black pepper and cayenne pepper) and the cheese with sainte maule (a type of black bear cheese made in the Loire region of France).
- I'd like to pair it with fresh whitefish, such as a carpaccio of sea bream.
