- The Kaze no Mori ALPHA series pursues the possibilities of sake through creative techniques by combining the traditional temple brewing technique "Bodhi Hashiro" and modern techniques. ALPHA2 expresses the individuality of the brewing water, the lifeblood of sake, to the fore by simplifying the character of rice through polishing. Kaze no Mori's brewing water is ultra-hard water with a hardness of over 250 mg/L drawn from deep underground in the Katsuragi mountain range. The minerality derived from magnesium and calcium can be felt to the fullest. We use reduced pesticide Akitsuho rice produced by Nakanishi Farm in Tsukee, Nara Prefecture. ALPHA2 was redesigned for this rice. The transparency of the flavor was further improved and the texture of the brewing water was maximized.
