- This special junmai sake is made from 55% Hidahomare, Gifu Prefecture's preferred rice for sake brewing, which is polished to 55%. The sake is bottled as it is after it has been vattered during the extremely cold season, and is unfiltered and unadulterated. The ginjo aroma is reminiscent of aromatic fruits such as pears and apples, and the clean acidity gives it a refreshing aftertaste. We recommend drinking it on the rocks with ice!
