- Junmai Ginjo-genshu brewed with up to 60% polished Yamadanishiki from the Tojo Special A district in Hyogo Prefecture. Sake made by reducing the power of rice. Various vintages and raw sake are also available. This sake has been adopted by a three-star restaurant in New York, USA. Chivalry uses the same Yamada-Nishiki and is made in Junmai-Ginjo production, with products ranging from 60% to 30% in 10% increments. We also recommend comparing the delicate flavors of the different tiers of sake.
