Cold sake is brewed in the bitter cold of winter, squeezed as new sake, and stored after being fired once. During the hot summer months, the sake is stored in the cool temperatures of the brewery, and when the autumn winds begin to blow, the sake is matured to the point where it can be enjoyed in its natural state without the second heating process that is usually required.
