Polishing ratio 90% (!) and 40% koji ratio (double the normal ratio!) This is an astonishing combination of rice polishing ratio of 90% (!) and koji ratio of 40% (double the normal ratio!). The unique flavor of the rice is brought out to the fullest. The exotic aroma is created by the yeast and rice malt, both of which have been trained using the traditional Yamahai-moto method. The lingering aftertaste of rich umami is deep and long. The fusion of the tradition of Yamahai-moto, the skill of the 7th generation Todo Master Mizuno, Omachi, and the hard water of Mount Amei opens up a new realm of Japanese sake.
