味わいの特徴
Shirakiku BLACK LABEL is a sake brewed in the Shirakiku way, returning to the basics of the teachings of "1, koji, 2, yeast, 3, structure". We believe that the most important thing is to make the koji for the sake mother, and in order to propagate more pure yeast, we used black koji, which uses the sterilizing power of citric acid, instead of the usual yellow koji. Black malted rice is used only for the sake mother, which is characterized by a slightly higher acidity than usual. It has a well-balanced flavor that makes the most of the flavor and sweetness of Koshihikari rice, and the fresh acidity from the black malted rice gives it a juicy taste. It also has a flavor similar to that of sweet white wine. Please enjoy Shirakiku that maximizes the flavor of Koshihikari rice and the aroma of yeast. The word "BRILLIANT" means "shining" in Japanese.
