- A series of only 720ml bottles brewed with different yeasts from Yamada-Nishiki produced in Mie Prefecture, polished to 55%. J stands for the first letter of No. 14 yeast. Even though it is fire-aged, the gasiness that remains gives it a fresh taste like a draft sake. At the same time, it has a gorgeous aroma. In the mouth, the umami flavor comes first, then the richness of Yamadanishiki spreads slowly, and the finish is crisp and refreshing with a sense of sizzle and acidity.
