This is the first release of the season, available every December. It is characterized by the refreshing, slightly bitter flavor—reminiscent of grapefruit and Muscat grapes (especially around the seeds)—that is a hallmark of Yamagata Masamune. While the brewing process itself remains virtually unchanged from that used during the harsh winter months, the consistent emergence of this aroma is undoubtedly due to the difference in temperature. Please enjoy the rich umami unique to nigori sake and the freshness characteristic of unpasteurized sake.
