味わいの特徴

For this NEXT5 project, we have unified the sake rice to be used and compared them. The rice used for this project, "Kaijo-Shinko," is an Akita-born rice suitable for sake brewing that was revived by Shinsei in 2009. It is so wonderful that it is a wonder that the cultivation of this sake rice once ceased, but now its attractiveness is being reevaluated and its cultivation is beginning to resume little by little in Akita Prefecture. We hope you will enjoy this precious sake rice as much as we do.
