This junmai sake was specially brewed for the "Fermentopia 2023" event held in Yaesu and Toyosu, Tokyo from June 6 to 11, 2023. This sake was brewed using the Genroku brewing method, a sake brewing method from the early to mid-Edo period. This method is characterized by the extremely small amount of water used in the brewing process (compared to today's methods). This makes the sake very drinkable and concentrated with the extracts of the ingredients. Also, because it is a "No. 6" series sake, it is also "unpasteurized" sake. Because it is unheated, the flavor changes daily. It must be kept refrigerated. The manufacturer's recommended consumption period is three months after shipment, but you will enjoy the explosive flavor at the peak of its taste.
