(3) It is made from pesticide-free ancient rice (Shifuku glutinous rice), which is rich in polyphenols and minerals, and is therefore good for maintaining and improving health. The most important point is the "ultra-low temperature fermentation," which is the limit of what yeast can grow. Ohanasake" is made with Aizan from Hyogo Prefecture, which is known for its smooth taste, and fermentation is controlled slowly and over time at 6-7°C (usually 13-15°C). Essential to the production of this low-pasteurized sake is the underground subterranean water from Mt. Ameizumi (Tanzawa Oyama), which boasts one of the highest hardness levels in Japan (150-160). Yoshikawa Brewery draws this mineral-rich water from three wells and uses it as brewing water. By precisely controlling the degree of fermentation, we have created an easy-to-drink sake with a low alcohol content (13%) for a Japanese sake and a mellow, gentle flavor.
