味わいの特徴
[The "Kura 〇" Series: Made with Single-Variety Rice from Aizu-Banshita] The flower of Aizu-Banshita Town is actually the cherry blossom. The label depicts a cherry tree blooming at the brewery. This 42-year-old cherry tree was planted by our CEO, Koichi Suzuki’s grandmother, in the year he was born. Last year, we were forced to cut down that "Kura-zakura" (Brewery Cherry) tree to make way for Akebono Shuzo’s new venture. Currently, we are preserving approximately 20 branches and three root sections. We hope to replant them when the new brewery—part of this new challenge—is completed. The Kura-zakura will continue to watch over our new history. We blended Aizu-grown Yamada Nishiki—known for its broad, generous flavor—with origa-rami (unfiltered lees), evoking the image of cherry blossoms blooming in the warm spring. This sake aims to express the dignified vitality of the cherry blossoms by pasteurizing the brew while retaining the origa-rami. To help you better experience the atmosphere of our brewery and our beloved hometown of Aizu-Banshita, we present the Kura 〇 Series, which specializes in single-variety sake rice grown in Aizu-Banshita and prefectural yeast. The common thread across all bottles is that they are 57% Junmai Ginjo, unfiltered, and pasteurized once. Each is brewed as a single batch. We hope to express the character of our hometown, Aizu-Sakashita, through differences in mash management, target specifications, and the resulting quality of the sake. The designs on each bottle feature motifs inspired by the flowers blooming on our brewery grounds.
