味わいの特徴
Limited brewing using rare sake rice "Aiyama". This sake is as round and clear as the night of the fifteenth day of the year, when there is not a cloud in the sky. It is a junmai ginjo made from Aizan produced in Hyogo Prefecture and Association No. 10. The graininess is fine and slippery, and the mouthfeel is full. The acidity spreads softly and quickly without astringency. It has a smoothness on the palate that is similar to that of sashimi prepared by a chef with a well-cared-for knife. It has a sharp impression that is different from the slightly chubby taste of the Omachi and Yamada-Nishiki varieties produced in Okayama that we usually use. To use an analogy, it is like an egg-shaped Pepin-san sake. Enjoy your time as an adult with this dining sake that can accompany you for a long time as the food progresses.
