- In Hirano’s sake brewing, “Nikomaru” is the rice that marks the beginning of Hirano. Our standard "HIRAN Nikomaru" is designed as an everyday companion to soothe your weary body, while "HIRAN Nikomaru Queen" offers a slightly more luxurious experience with its feminine aesthetic and flavor profile. Finally, "HIRAN Victoria" was created to deliver the ultimate luxury experience from HIRAN. In our pursuit of the "Nikomaru" rice variety, we have focused on the "polishing" process—specifically, how much the rice is polished—and have experimented with brewing sake based on different polishing ratios. For this release, we took on the challenge of polishing the rice to a ratio of 10% or less, a level rarely seen in the market. By polishing the rice to a polishing ratio of 2.5%—nearing the very limits of what is possible—we have brought out the delicate flavors of the Nikomaru rice at an unprecedented level. We consider this to be one of Japan’s traditional techniques worthy of global pride, an art of fermentation born from rice, water, and microorganisms. Please savor the transparent sweetness and delicate flavors derived solely from the purest essence of Nikomaru. This product is a limited-edition sake for CSW2026.
