味わいの特徴
This is the brewery's flagship sake, a masterpiece crafted in partnership with local farmers to revive the brewery. It has won numerous top awards at domestic and international sake competitions and appraisals, including a Gold Prize at the National New Sake Appraisal, the Highest Prize (1st Place) at the Yamaguchi Prefecture New Sake Appraisal, a Regional Trophy at the International Wine Challenge, and a Platinum Award and a place in the Top 5 at the Clasmaster. This junmai daiginjo sake features a fruity aroma reminiscent of pineapple and white peach, paired with an elegant, soft sweetness akin to wasanbon sugar. Its sub-name, "Kakitsubata" (Iris), carries the floral meaning "Happiness will surely come." It was named with the wish that this cup may bring happiness to all who drink it. "Kakitsubata" also refers to a layered color scheme in Heian-period court attire. We reflect on Japan's timeless aesthetic sensibilities and traditional culture, connecting them to tomorrow.
