味わいの特徴
This is a junmai ginjo sake made using "Saito no Shizuku," a sake rice variety unique to Yamaguchi Prefecture. "Saito no Shizuku" is a sake rice developed exclusively in Yamaguchi Prefecture through the crossbreeding and selection of the "phantom rice" "Kokuryo Miyako" (maternal line) and "Saikai No. 222" (paternal line, parent: Yamada Nishiki). While it possesses the full-bodied richness reminiscent of Yamada Nishiki, it is characterized by a slightly sharper profile and a clean, crisp finish. This highly popular product is released every spring when the cherry blossoms bloom. It features a vibrant aroma, with a delightful balance of sweetness and acidity that matches its cute appearance, complemented by a subtle hint of bitterness.
